Chewy chocolate chip cookies: Finely crush 3 sleeves graham crackers (1 box) by putting them in resealable bags and crushing them with a rolling pin. In a large mixing bowl, mix crumbs, 1 cup chopped walnuts, and 1 1/2 cups chocolate chips by hand. Add 2 cans of sweetened condensed milk, mixing by hand, until all the dough is moist.
Drop by teaspoonful onto a parchment paper-lined cookie sheet. Cook for 10 to 12 minutes, until the bottoms are slightly brown. Cookies will be slightly soft in the middle. Gently slide parchment and cookies off onto a wire rack to cool slightly before peeling off cookies.
Top-your-own tostadas: Lightly brush tortillas with olive oil and bake at 300° for 10 min. Flip and brush with more oil and bake for 5 minutes or until crisp. Heat refried beans; spread beans lightly over each tortilla. Sprinkle with cheese then broil until cheese melts. Top with toppings of your choice, including sliced bell peppers, avocado, shredded lettuce, etc. Let the kids pick and choose what looks tasty to them.
